Gas roaster
Rotating drum roasting with flame control and a mastered treatment curve.
What this machine does
The gas roaster handles products that require dry heat treatment to develop their aromas: groundnuts, cereals, oilseeds, sesame. The rotating drum keeps the charge constantly tumbling, the condition of uniform treatment: without tumbling, the layer in contact with the wall burns while the core of the mass stays raw.
What gas brings over a wood fire is control. Roasting turns on a time-temperature curve where a few tens of seconds separate a balanced profile from a burnt one; only a modulating heat source allows that curve to be followed repeatably. The second requirement is cooling: the mass stays hot after discharge and keeps reacting, so slow cooling systematically shifts the product towards a heavier roast than intended.

The parts that do the work
Rotating drum
Constant tumbling of the charge ensuring uniform heat treatment.
Modulating gas burner
Adjustable output allowing a temperature ramp to be followed.
Temperature monitoring
Probe and set point, with tracking of the roast profile.
Discharge and cooling
Rapid discharge to a ventilated tray, freezing the profile obtained.
Technical data and configurations
| Characteristic | Indicative value |
|---|---|
| Batch capacity | 15 to 150 kg depending on model |
| Energy | butane or propane gas |
| Working temperature | according to product and target profile |
| Cycle time | from a few minutes to 30 min depending on product |
| Control | set point and temperature probe |
| Cooling | ventilated tray recommended |
| Product contact materials | AISI 304 stainless steel |
| Extraction | fume extraction hood |
These are usual design ranges for this type of machine, intended to guide early thinking. The contractual characteristics of the equipment actually manufactured — throughputs measured at acceptance, absorbed power, real footprint and weight — are established by the SOTIC design office and stated in the technical offer.
Available configurations
- Several drum capacities according to the cadence sought.
- Version with integrated ventilated cooling tray and stirrer.
- Direct or indirect heating according to product and hygiene requirements.
Installation requirements
- Ventilated room with fume exhaust to the outside.
- Gas cylinders stored outside, secured and out of the sun.
- Non-combustible floor and a suitable, periodically inspected extinguisher nearby.
- Clearance in front of the drum for safe discharge.
Maintenance and safety at the workstation
A machine lasts as long as its maintenance does. The points below appear in the preventive maintenance plan handed over at acceptance and are covered during operator training.
Preventive maintenance
- Clean the drum between different products to avoid aroma carry-over.
- Check gas hoses, their expiry date and joint tightness with soapy water.
- Clean the exhaust duct: deposits are a fire risk.
- Periodic calibration of the temperature probe.
Safety
- Close the cylinder valves at the end of every shift, without exception.
- Leak detection with soapy water only, never with a flame.
- Thermal protection at discharge: the charge is at high temperature.
Before ordering this machine
Direct heating is simpler and thermally more efficient, but puts the food in contact with combustion products. Indirect heating, through an exchanger, fully protects the product at the price of lower efficiency and higher cost. For products destined for export or subject to strict hygiene requirements, indirect heating is the only option.
By fixing a roast profile — charge, starting temperature, ramp, plateau, end criterion — and respecting it every cycle. Charge is the parameter most often neglected: a drum filled differently from one cycle to the next does not give the same product, even at the same set temperature.
